The Recipes:




Lentil Soup

Ingredients:

  • 1 cup lentils

  • 1 onion, chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 4 cups vegetable stock

  • 1 tsp cumin

  • Salt and pepper to taste

Instructions:

  1. Sauté onion, carrots, and celery in olive oil until softened.

  2. Add lentils, vegetable stock, cumin, salt, and pepper. Simmer for 30 minutes until lentils are tender.

  3. Serve with whole-grain bread.


 

Herb-Roasted Chicken

Ingredients:

  • 1.5 lbs chicken thighs

  • 2 sweet potatoes, diced

  • 1 lb green beans

  • 2 tbsp olive oil

  • 1 tsp each: rosemary, thyme, garlic powder

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Toss chicken, sweet potatoes, and green beans with olive oil and seasonings.

  2. Arrange on a baking sheet and roast for 30-35 minutes, until chicken is cooked through and vegetables are tender.
