The Recipes Needed (Week 5)




Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers

  • 1 lb ground turkey

  • 1 cup cooked quinoa

  • 1 can diced tomatoes

  • 1 tsp garlic powder

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Cut the tops off bell peppers and remove seeds.

  2. In a skillet, cook ground turkey until browned. Mix with quinoa, diced tomatoes, and seasonings.

  3. Stuff each pepper with the mixture and place in a baking dish.

  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.


Spaghetti Carbonara

Ingredients:

  • 12 oz spaghetti

  • 4 oz pancetta or bacon, diced

  • 2 eggs

  • 1/2 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • Salt and pepper to taste

Instructions:

  1. Cook spaghetti according to package instructions. Reserve 1 cup pasta water.

  2. In a skillet, cook pancetta until crispy. Add garlic and sauté briefly.

  3. In a bowl, whisk eggs and Parmesan. Slowly add reserved pasta water to temper eggs.

  4. Toss spaghetti with pancetta and egg mixture. Stir until creamy. Season with salt and pepper.
