Week One Recipes (since no one asked)





White Bean and Vegetable Soup

Ingredients:

  • 2 cans of white beans (drained and rinsed)

  • 1 onion, diced

  • 2 carrots, sliced

  • 3 cups chicken stock

  • 1 tsp Italian seasoning

Instructions:

  1. Sauté onion and carrots in a stock pot until softened.

  2. Add beans, chicken stock, and Italian seasoning.

  3. Simmer for 20 minutes and serve with whole-grain bread.



Oatmeal Muffins

Ingredients:

  • 1 1/2 cups oats

  • 1 cup milk

  • 1/4 cup honey

  • 1 egg (or egg substitute)

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

Instructions:

  1. Preheat oven to 375°F.

  2. Mix oats and milk in a bowl; let sit for 10 minutes.

  3. Stir in honey, egg, baking powder, and cinnamon.

  4. Pour into muffin tins and bake for 15-20 minutes.


 

Slow-Cooker Chili

Ingredients:

  • 1 lb ground turkey

  • 1 onion, diced

  • 1 can diced tomatoes

  • 2 cans of beans (your choice)

  • 1 tsp chili powder

  • 1 tsp cumin

Instructions:

  1. Brown ground turkey and onion in a skillet.

  2. Add to slow cooker with tomatoes, beans, and spices.

  3. Cook on low for 6-8 hours. Serve with cornbread.
